Week 6: Red Velvet Cheesecake Cookies

What is better than red velvet cake, cheesecake, and when you combine the two into a cookie what could be better??

As I mentioned before, I bake for birthdays at work. I let whoever's birthday it is pick what they want and this was my 3rd birthday this year. I found this recipe on Pinterest and when my coworker with this birthday mentioned he liked red velvet, I promptly suggested this recipe, despite it difficulty. I like a challenge and boy was this a challenge.

Week 6: Red Velvet Cheesecake Cookies

These cookies were highly praised at work. Everyone loved them! These are defiantly cookies to make if you looking to impress someone. It takes a little while to learn the art of assembling the cookies, but don't get discouraged. Also, I made a lot more cookies from this recipe. You can make them as big or small as you want.

Read through the whole recipe before you make plans to make it to allow for enough time. I started these cookies before the Super Bowl, took a break during, and finished them afterwards around 1am.

This recipe was posted to Pinterest on this great blog. Check it out here.

Warning: You hands may look like this when you are done. But, don't worry it does come off eventually.

Week 5: Fabulous Roast

My best friend, Amber, has been trying to get me to make a roast using her recipe, and I have to admit I was skeptical at first. I finally gave in and made it as my Week 5 recipe and I am so glad I did!! It was fabulous!

This recipe is posted here on Amber's blog. While you are there, be sure to check out the rest of her blog. You won't be sorry.

I actually used a deer roast for this recipe and it was awesome!

Aunt Sharon's Potato Soup

This is not a Resolution Recipe. But, it is a fantastic recipe that I just have to share.

My Aunt Sharon shared this recipe with my older sister Heather, who, upon discovering how awesome it was, then shared it with me. I am now sharing it with permission.

Peel, clean, and cut up potatoes
Put in pot w/ chicken broth & bring to boil
Cook until potatoes are JUST this side of firm
Add a half a stick of butter
Add a can of evaporated milk
Add salt, pepper, and parsley
Add celery and onions
Add instant mashed potatoes to thicken
Stir
Top with bacon, chives or green onions, and cheese

This is the easiest, most delicious, potato soup ever! You have to try it! I recommend it with grilled cheese.

Bonus Tip: If you buy green onions, save the bulbs and put them in a glass of water and they will grow and you can use them again and again!

Here is my attempt:

Week 4: Seasoned Oyster Crackers

I admit this recipe is a little weak.. but give me a break, I was sick all week. I literally went to work, came home, and went to bed.

Basically, I wanted a snack and we were low on groceries. I was looking in the cabinet and found a box of oyster crackers. I got to thinking about the saltines with ranch dressing mix and crushed red pepper and thought I would try a variation.

Week 4: Seasoned Oyster Crackers

Here is the "Recipe":

Oyster Crackers
Olive Oil
Hot Sauce
Black Pepper
Garlic Salt
Cajun Seasoning (I would have preferred Cayenne pepper)
Cilantro
Zip Lock Bag
Wax Paper

Mix all the spices together with the olive oil and hot sauce in the zip lock bag. Add the oyster crackers and shake. Once all the crackers are coated evenly, spread them out on the wax paper to dry.

That's all!

So easy and yummy!

The great thing about this recipe is that it is more of an idea than a real recipe. The only "requirements" are oyster crackers, olive oil, and a zip lock bag. The rest can be customized to what is in the cabinets or your favorite spices.

Enjoy!

Week 3: Waffle Iron Chocolate Chip Cookies

I got a waffle iron for Christmas! Yay! Thanks Santa!!!

Making waffles is so easy. I make waffles a lot on Saturdays.. usually for lunch or dinner. I love waffles. I think loving waffles is contagious and I caught it from one of my best friends Kayla! I like putting Nutella on my waffles.

One day, I was contemplating the amazingness of waffles while cruising Pinterest and thought "Hmmm...what else can I make in my waffle iron". After a few search attempts, I finally found something promising: waffle iron cookies! After reading a few recipes I found the one I wanted to try.

Week 3: Waffle Iron Chocolate Chip Cookies

Note: I bake almost every Friday and/or birthdays at work.

These cookies caused quite a stir at work. The debate centered around whether these "cookies" are more waffle-like or cookie-like. I think they are a lovely mixture of the two textures. Personally, I loved them!

Try them for yourself! Here is the recipe.

Week 2: Olive Garden's Chicken Gnocchi Soup

The hardest part of this recipe was finding gnocchi in the store!! My roommate spent a long time asking every employee in Publix in order to find it, but she finally found it! After that it was really pretty easy to make. I wish I had added the cornstarch to thicken it, but we were so hungry we couldn't wait!

Week 2: Chicken Gnocchi Soup

It was just about as good as the real deal at Olive Garden. Find the recipe here.

P.S. Soup makes for horrible photographs.

New Year's Resolution

I know it is February now, but I am going share my New Years Resolution. I am making a new recipe (of my own invention or someone else's) once a week for all 52 weeks of 2012.

For the past six weeks I have managed to stick to my resolution. What have I been making? Glad you asked! I will do a post for eat recipe, but here is the first recipe of the year.

Week 1: Buffalo Chicken Soup

Not the best picture, but the soup was really good!
